Our VG Simnel Cake Cookie Sandwich is inspired by traditional simnel cake — a spiced vegan cookie made with ground almond, raisins and glacé cherries, sandwiched with a swirl of almond buttercream, then finished with a topping of toasted marzipan for that unmistakable simnel flavour.
It’s rich, fruity, nutty and beautifully spiced — basically the “grown-up Easter treat”… but still very much a cookie sandwich.
