But how do we do it?

Well, first we start with the brain storm; talking to our customers and seeing what we can turn into yummy treats. Flavours, texture, aesthetic, the latest trends... whatever tickles your fancy!

Chocolate Orange Cookie Sandwich Not Vegan — Let’s take our ever so popular Chocolate Orange Cookie Sandwich. Of course we can only use Terry’s Chocolate Orange. Now that’s not vegan. So alas our Chocolate Orange Cookie Sandwich is off the menu. (for our vegan friends at least)

Now, our best sellers Biscoff Cookie Sandwich and Oreo Cookie Sandwich... it's game on! Biscoff and Oreo’s are both naturally vegan. So now we need to adapt the base cookie recipe. Over the years we’ve researched and tried baking different vegan recipes. Learning from Mrs Cupcake how to make "The Naughtiest Vegan Cakes in Town!"

We don’t use real butter. Yep! That’s right. We use a 12.5kg block of cake margarine which happens to be plant based and approved by the Vegan Society. This goes into all our baking. If we used real butter, well, you’d have to take out a mortgage to buy one of our yummy treats.

Same goes for the buttercream. That's also plant based and approved by the Vegan Society. White chocolate, milk and dark... all available vegan friendly.

So all that's left are the eggs. In baking, eggs are used as a rising agent and as a binder. But there are other binding agents you can use instead. We’ve settled on oat milk. We did use soya milk, but realised, by switched to oat milk, we'd only have one allergen, that being wheat. Perfect for those that are intolerant to soya.
